Fruit Array with Goat Cheese Medallions ‘n Berry Coulis
This beautiful dish is a perfect example of when “less is more.” The freshest of fruits play “dress-up” with ultra-creamy and decadent goat cheese “buttons” enrobed in a thin layer of toasted nuts. Ingredients
- 1 cup blueberries
- 1 cup blackberries
- 1 cup raspberries
- 1 cup cherries
- 8 large strawberries (with leaves left on if desired)
- 2 ripe peaches or nectarines, cut into wedges
Instructions
- Place fruit on a large decorative platter.
- Tuck in goat cheese medallions among fruit.
- Serve with Mixed Berry Coulis on the side or drizzle over fruit before serving.

Make Ahead and Storage Tips: fruit is best arranged on platter same day as serving. Roll goat cheese in chopped pistachios no more than 1 day ahead as the nuts will become soggy. Coulis may be made up to 3 days ahead.
