Smoked Salmon and Cucumber Canapés
What goes better with smoked salmon than a “schmear” of cream cheese? For these perky little hors d’ouerves, I decided to dress them up with goat cheese. But if you are a traditionalist, cream cheese will be just as delish.

Ingredients
- 1 English cucumber or 3 Kirby (pickling) cucumbers
- 1 (3 ounce) log goat cheese (or cream cheese), cut into thin slices
- 2-3 ounces smoked salmon pieces
- Fresh dill sprigs
Instructions
- Slice cucumber on the diagonal; arrange on a medium decorative serving platter.
- Layer cucumber slices with goat or cream cheese.
- Top each with smoked salmon pieces.
- Tuck dill sprigs under the smoked salmon.
