Smoked Salmon and Cucumber Canapés

What goes better with smoked salmon than a “schmear” of cream cheese? For these perky little hors d’ouerves, I decided to dress them up with goat cheese. But if you are a traditionalist, cream cheese will be just as delish.

Yield: about 1 1/2 dozen

Ingredients

  • 1 English cucumber or 3 Kirby pickling cucumbers
  • 1 3 ounce log goat cheese (or cream cheese), cut into thin slices
  • 2-3 ounces smoked salmon pieces
  • Fresh dill sprigs

Instructions

  • Slice cucumber on the diagonal; arrange on a medium decorative serving platter.
  • Layer cucumber slices with goat or cream cheese.
  • Top each with smoked salmon pieces.
  • Tuck dill sprigs under the smoked salmon.

Notes

Make Ahead and Storage Tips: canapés may be prepared up to 1 day ahead. Cover and refrigerate until serving time.
Since these ‘lil darlings will disappear quickly, you may want to double the recipe!
