Moroccan Carrot Salad

Ingredients

  • 1/3 cup olive oil
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1/4 teaspoon ground ginger
  • 1 teaspoon cumin
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon coriander
  • 1/4 teaspoon salt or to taste
  • Cayenne pepper to taste
  • 1 pound carrots peeled and shredded (or use shredded packaged carrots)
  • 1/2 cup diced fresh pineapple or canned in natural juice
  • 1/4 cup chopped fresh mint
  • Fresh mint sprigs for garnish

Instructions

  • In a large bowl, whisk together olive oil, juices and spices.
  • Mix in shredded carrots, pineapple (optional) and chopped mint, combining well. Garnish with mint sprigs.
  • Let stand at room temperature for 1 hour to allow flavors to blend.

Notes

Make ahead and Storage Tips: salad can be made 1 day ahead and stored in the refrigerator. Remove from refrigerator about 30 minutes before serving.
