Grilled Mediterranean Turkey Burgers

For sure, you must have a tried ‘n true burger recipe, well this is mine! As Mediterranean foods are amongst my favorites, I decided to jazz up my traditional burger mix with the addition of fresh mint, oregano, garlic, feta cheese and roasted red peppers. Extremely flavorful and moist as well as so fun to make…and eat! These burgers are wonderful served in pita pockets with Israeli Salad with Mint ‘n Feta and Tzatziki.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 2 pounds ground turkey I don’t recommend using all turkey breast as it’s too dry
  • 1/2 cup fresh chopped mint
  • 1/3 cup fresh chopped parsley
  • 2 tablespoons chopped fresh oregano
  • 1/4 cup feta cheese crumbled (As feta is salty, resist the urge to add more salt to this recipe.)
  • 2 large roasted red bell peppers from jar, rinsed, blotted dry and chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 6-inch whole-wheat pitas
  • Lettuce leaves

Instructions

  • In a medium pan, heat olive oil over medium-high setting until hot. Sauté onion and garlic for about 7 minutes or until softened and browned. Set aside to cool.
  • In a large bowl, combine reserved onion-garlic mixture with remaining burger ingredients. (ground turkey through pepper) Note: egg or binders such as bread crumbs are not needed
  • Form into 6 patties. Cover; refrigerate for 30 minutes.
  • Lightly oil grill rack; pre-heat grill to medium setting. Grill burgers for about 6 minutes on each side or until internal temperature reaches 165 degrees F.
  • Allow burgers to rest for 5 minutes before serving.
  • Serve in pita pockets with lettuce leaves, Israeli Salad with Mint ‘n Feta and Tzatziki.

Notes

Make Ahead and Storage Tips: uncooked burgers may be refrigerated, covered up to 1 day before grilling. Store cooked burgers in the refrigerator, covered, for up to 2 days or freeze for up to 4 months. Reheat covered at 275 degrees F for about 8 minutes or just until heated through.
Grilling not an option? Burgers may also be cooked on a stovetop pan, following the same method.
