Granola-Berry Yogurt Parfaits

This recipe is dedicated to all of you that run out of the house in the morning without anything healthy in your tummies! These breakfast (or anytime) parfaits are so simple, fun and nutritious and are loved by everyone… including picky kids who turn up their noses at anything other than cereal and milk for breakfast. No two parfaits need be the same as your family can have a blast selecting their own yogurts, fruits and granola.

Ingredients

  • 4 cups regular or Greek yogurt plain or fruit-flavored
  • About 4 cups favorite fruit see MPM Mini Bites for ideas
  • About 2 cups Power Crunch Granola or Pack ‘n Go Granola
  • 100 % all natural apricot preserves such as Polaner or Dalfour or honey

Instructions

  • For larger fruits such as bananas, peaches, pears, etc., either slice or chop before adding to parfait.
  • In four glasses, layer all ingredients as desired, except for preserves or honey.
  • Drizzle each parfait with preserves or honey and serve. That’s it!

Notes

Yogurt: choose brands that are made with pure ingredients, avoiding those with fillers, additives and artificial sweeteners. My personal favorites are Fage Greek yogurt, Stoneyfield and Brown Cow which can be found in most supermarkets as well as natural food stores such as Whole Foods.
Fruit: The sky’s the limit when it comes to choosing fruit for these parfaits, so don’t shy about trying new flavor combinations! Focus on fruits that are available seasonally in your area. Fun fruits to “play” with are apples, pears, oranges, peaches, nectarines, bananas, kiwi, pineapple, melons, berries, plums, grapes.…the list is endless!
Granola: if you’re time-crunched and aren’t able to make one of these granolas, look for an all-natural brand with lower amounts of sugars such as Enjoy Life or Back to Nature.
