Apple-Dill Vinaigrette

Sure, buying store-bought dressings may be more convenient, but often are quite lacking in taste. Try whipping up this light and fresh vinaigrette laced with the wonderful flavors of apple, Dijon mustard, honey and dill. Who knows, you just may never buy a commercial brand again.

Ingredients

  • 1/4 cup apple cider vinegar
  • 1/4 cup 100% apple juice
  • 2 teaspoons honey or to taste
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon salt
  • Freshly ground pepper to taste optional
  • 1/2 cup extra-virgin olive oil or almond oil
  • 1/4 cup fresh dill springs

Instructions

  • In a small food processor or blender, incorporate all ingredients except oil and dill. Slowly add oil, pulsing (using on and off turns) until well combined. Add dill; pulsing until minced.
  • Or in a small bowl, whisk together all ingredients except oil and dill. Slowly add oil, whisking constantly until well combined. With a sharp knife, mince dill. Whisk into vinaigrette.

Notes

Make Ahead and Storage Tips: cover and refrigerate until serving time. Vinaigrette may be made up to 3 days ahead. Whisk again before serving.
Experiment with your favorites seasonal herbs such as thyme, oregano and basil.
