Keeping Dinnertime Simple, Healthy and FAST!

Once the first days of Autumn start rolling around, thoughts turn toward much busier times that lie ahead. Before long, our calendars fill up with bunches of activities, squeezing available time for planning, shopping and cooking healthy dinners into just a few precious moments.

Does this mean you have to ditch eating “clean” in favor of quick and easier take-out meals? Absolutely not. Instead, make a pledge to work smarter in the kitchen. Start by keeping a well-stocked pantry, fridge and freezer so you can make a variety of delicious simple main courses and sides.

No need to stop in the fast-food lane when you can create these tasty Roasted Veggie Pizzas. Or “pull double-duty” by making dishes that multi-task like Confetti Turkey Meatballs. Enjoy these “cuties” tonight–then make meatball subs the next night along with a quickie salad and fruit. My Signature Crab Cakes whip up in minutes and make enough to serve a second time over a biggie salad or in wraps for a yummy dinner-on-the-run.

And promise to dedicate some time for planning, shopping and cooking a few simple dishes, even if it means dusting off that slow cooker and stocking your freezer with some fun ‘n healthy dinners such as Mexican Jumping Bean Chili and “Rotisserie” Chicken ‘n Vegetables.
