For Your Easter and Passover Tables: Fabulous Menus ‘n Recipes

With the arrival of spring, comes two beloved holidays, Easter and Passover, each with its own special foods and family traditions. When thinking about this year’s Easter and Passover menus, I have been mindful of the cries of overindulgence I’ve been hearing regarding this winter’s eating. Perhaps for many, the frigid temperatures and never-ending snowstorms are to blame, keeping us inside instead of hitting the gym or burning calories through favorite outdoor activities. For some, a feeling of apathy or even lethargy has persisted, causing healthy eating plans to be relegated to the back burner in favor of too many convenience foods and visits to the fast food lane. As I did last year, I was determined to create some new dishes for both Easter and Passover that are fun to make and healthy (with a few indulgences!) while still embracing many of the flavors, colors and traditions we look forward to.

Please don’t be shy about “borrowing” recipes from either of the menus as many of these dishes can be enjoyed during both holidays.

 

Easter Menu Highlights: Dijon ‘n Herb-Encrusted Rack of Lamb and Spaghetti Squash ‘n Veggie Mélange are both wonderful main courses which pair beautifully with Mediterranean Couscous and Roasted Moroccan-Spiced Carrots. And Creamy NY-Style Cheesecake accompanies Mini Fruit Kabobs with Chunky Strawberry Dip which are lovely dessert choices to complete your festive meal.

Passover Menu Highlights: Enjoy Classic Jewish Chicken Soup, Mediterranean-Spiced Chicken Thighs, Apricot ‘n Lemon Glazed Salmon, Holiday Tzimmes and No-Noodle Veggie “Kugel” for the main portion of the seder meal. Sweet treats include our family’s favorite Passover desserts Chocolate Chip Kamish Bread and Apple Crisp. Or “go light” with my gorgeous Fruit Array with Berry Coulis. (Please adjust recipes according to your level of observance.)
