Crispy Choco-Chip Peanut Butter Cookies

If you loved sinking your teeth into freshly baked chocolate chip peanut butter cookies as a kid but now tend to refrain, you will love my cleaner version. Using a healthier sugar (and less of it), no flour and all-natural ingredients, you and your family can now mindfully indulge in this gluten-free sweet treat without guilt!

 
Made without a mixer, these super-quick cookies are the perfect baking project for all the “lil’ chefs at your house. Guaranteed to be gobbled up in a flash, you may want to consider making a double batch so you have plenty on hand for lunch boxes and after school snacks. And yes, these “babies” freeze beautifuly!

 
 

Crispy Choco-Chip Peanut Butter Cookies

Yield: 16 to 24 cookies (depending on desired size)

Instructions

In a large bowl, beat egg with a wooden spoon. Mix in coconut sugar and peanut butter, combining well. Fold in chocolate chips. Form dough into balls and place 2-inches apart on baking sheets. Flatten each ball twice with a fork in a crisscross pattern.

 
Bake for 10 to 11 minutes or until lightly browned. Let cool.

Ingredients

  • 1 large egg
  • 1/2 cup coconut sugar see MPM Mini-Bites
  • or 1/4 cup cane sugar + 1/4 cup packed brown sugar
  • 1 cup natural no-stir peanut butter I used Whole Foods 365-unsweetened
  • 1/2 cup all-natural chocolate chips I used Ghiradelli 60% Cacao Bittersweet Baking Chips
  • Parchment paper optional

Instructions

  • Preheat oven to 375 degrees F. Line 2 baking sheets with parchment paper. (or use ungreased cookie sheets)
  • In a large bowl, beat egg with a wooden spoon. Mix in coconut sugar and peanut butter, combining well. Fold in chocolate chips.

Notes

Make Ahead and Storage Tips: dough may be prepared 1 day ahead. Store covered in the refrigerator. Let dough come to room temperature before forming cookies. (about 20 minutes) Store baked cookies at room temperature for 3 days or refrigerate for up to 3 weeks. Cookies may also be frozen for up to 4 months.

 

Notes

Tell me more about coconut palm sugar! I have been searching for a healthier sweetening alternative for use in baking and have been experimenting successfully with coconut palm sugar. (also called coconut sugar) Some brands to look for are Nutiva, Mahava, and Wholesome Sweeteners.
 
Reportedly lower glycemic and possibly suitable for some diabetics, coconut palm sugar has a similar look, taste and texture of brown sugar, albeit to some, less sweet. Coconut palm sugar can replace regular cane and/or brown sugar in equal amounts in most recipes. Do your own research about this unprocessed sweetener to decide if it’s an acceptable choice for you. Naturally, if you have a medical concern, check first with your health care practitioner.
 
Kid and grown-up approved! These yummy cookies are great for anytime snacking as well as for tucking into lunch boxes. And if you have ‘lil chefs at home, these cookies would make a fun baking project. So get out the aprons, a mixing bowl and spoon and have a blast!
